Air Fryer Turkey Breast: Manual Times, Safe Temp and What Fits

How long turkey breast takes in an air fryer according to published maker sources, the USDA 165°F safe temperature, thermometer placement and what size fits.

Air fryer turkey breast is done at 165°F in the thickest part, the USDA FSIS figure for all poultry. For time, Butterball gives 400°F for 45 to 60 minutes for a thawed whole breast, and a Cosori recipe cooks a 2.5-pound half breast at 330°F for 40 minutes. Times vary by model, so trust the thermometer.

Those two figures do not agree, and that is the point of this page. Turkey breast is missing from most air fryer charts, so the numbers below come from the few maker sources that publish one. We have not cooked any of this ourselves, and this is not a recipe.

What do air fryer manuals say about turkey breast?

Mostly nothing. We checked the four charts this site uses for its air fryer cooking times page, and none has a row for fresh turkey breast.

The right-hand column is there for scale. It shows how much poultry each maker expects its basket to handle, which matters more for turkey than for wings. A chicken row is not a turkey instruction, so do not copy the time across.

Which published sources give a time for turkey breast?

Two kinds of maker publish one: the company that sells the turkey, and an air fryer brand’s own recipe pages.

A few things stand out.

Butterball’s 400°F and Cosori’s 330°F are 70 degrees apart, and neither page says which basket size its time was set for. That spread is normal. FSIS notes that each air fryer has different cooking times “due to the size and power of the appliance.”

Weight matters as much as the dial. Cosori’s TurboBlaze recipe says a breast smaller or larger than 3 pounds may need the cook time adjusted.

For comparison, the FSIS roasting chart for a regular oven at 325°F lists 1 1/2 to 2 1/4 hours for a 4 to 6 pound breast. That is an oven figure, not an air fryer one. It is a reminder that a big bone-in breast is a long cook in any appliance.

What temperature is turkey breast done?

165°F. The FSIS safe minimum internal temperature chart lists “All Poultry” at 165°F and names breasts, whole birds, legs, thighs and wings. Its air fryer page repeats the rule for poultry cooked this way.

Butterball’s air fryer instructions end at the same number: cook “until a food thermometer inserted registers 165° F.”

Color and juices are not a test. FSIS says the only way to know food has reached a safe internal temperature is to use a food thermometer.

Where does the thermometer go?

FSIS gives separate placement rules for parts and whole birds.

  • Turkey breast and other poultry parts: the thickest area, avoiding the bone.
  • Thin pieces, such as tenderloins or cutlets: in through the side, until the tip reaches the center.
  • A whole bird: three places. The innermost part of the thigh, the innermost part of the wing and the thickest part of the breast.

Check more than one spot on a large breast. FSIS says large or irregular foods should be checked in several places.

An instant-read thermometer is used near the end of cooking and taken out again. FSIS says not to leave a thermometer in food while it cooks unless its maker says it is designed for that. Oven-cord and wireless probe types are built to stay in; check that the cable and probe suit a closed air fryer drawer before relying on one.

Does turkey breast need to be thawed first?

Every maker source above starts from a thawed breast. Butterball’s first step is to thaw it completely. Cosori says store-bought turkey breasts are often frozen and should be fully defrosted in the refrigerator one day before cooking.

FSIS lists three safe ways to thaw a turkey:

  1. In the refrigerator. Allow about 24 hours for each 4 to 5 pounds, in a refrigerator at 40°F or below. A thawed turkey can stay there 1 or 2 days before cooking.
  2. In cold water. Allow about 30 minutes per pound, in a leak-proof bag, changing the water every 30 minutes. Cook it immediately afterward.
  3. In the microwave. Follow the oven maker’s instructions and cook the turkey immediately.

Thawing on the counter is not on the list. FSIS says a package of frozen poultry left out more than 2 hours is not at a safe temperature, even if the center is still frozen.

Bone-in, boneless, legs, wings and tenderloins

None of the four air fryer charts has a row for any turkey cut, so there is no manual time to quote for legs, wings or tenderloins either. What the sources do give:

  • Bone-in whole breast. Butterball’s instructions are for a whole breast with the rib cage cut away, which also makes it shorter and flatter in the basket.
  • Half breast, bone in. Cosori’s citrus recipe uses a 2.5-pound half breast with rib meat, placed skin side up.
  • Boneless breast. Cosori’s TurboBlaze recipe uses a 3-pound boneless breast.
  • Legs and wings. The safe temperature is the same 165°F. FSIS places the thermometer in the thickest part, away from the bone.
  • Tenderloins and cutlets. Thin pieces are checked from the side, per FSIS.

Turkey legs and wings are larger than the chicken pieces the charts are written for. Treat any chicken row as a rough starting point at most, keep the pieces in one layer and check each one.

Cooking several legs or wings at once raises the crowding question. FSIS says overcrowding can stop enough air from circulating to cook food properly and suggests batches for large amounts. What size turkey breast fits in an air fryer?

Makers rarely publish inside basket dimensions, so the best evidence is what each one says its machine can hold.

Height is the limit that catches people. The Philips note about chicken legs touching the element applies to any tall piece of poultry. The Ninja AF100 owner’s guide gives the same warning in general terms: do not overfill the basket, to prevent food contact with the heating elements.

Can you cook a whole turkey in an air fryer?

Not in the basket models covered here, going by what their makers state. The largest whole bird any of them names is a 6-pound chicken in the Ninja DZ401, and the FSIS table of other ways to cook a whole turkey starts at 8 pounds.

Oven-style air fryers are the exception to check. They have a door and a rack instead of a drawer, and some are built for roasts. SharkNinja’s DT200 series FAQ lists a Whole Roast function and an interior a little over 11 inches high. Whether a given bird fits is a question for that model’s own manual, so look for a stated weight before you plan a meal around it. Is an oil-less turkey fryer the same thing?

No, and the names cause confusion. An “oil-less turkey fryer” is a different appliance from a kitchen air fryer.

Charbroil’s Big Easy is the product most people mean. Charbroil describes it as an outdoor oil-less air fryer that runs on propane and cooks with infrared heat, and says it takes a turkey of up to 16 pounds. It is a patio cooker, closer to a grill than to a countertop drawer.

Resting, carving and leftovers

Butterball says to let an air-fried breast stand 10 minutes before carving. Cosori’s recipes say 10 to 15 minutes. For a whole roasted turkey, FSIS suggests 20 minutes for quality, so the juices set and the bird carves more easily.

Turkey breast for Thanksgiving and Friendsgiving

A breast instead of a whole bird suits a small table, and cooking it on the counter leaves the main oven free for everything else. That is the main reason an air fryer earns its space on the fourth Thursday of November.

The planning follows from the sources above. Start thawing early: at the FSIS rate of 24 hours for each 4 to 5 pounds, a 6-pound frozen breast needs more than a day in the refrigerator. Check the fit before the day by putting the wrapped breast in the cold basket and closing the drawer. If it is too tall, Butterball’s step of cutting away the rib cage lowers it.

The rest time is useful too. The 10 to 15 minutes a breast stands before carving is when the basket is free for a vegetable side.
