At a holiday meal an air fryer works best as a second, smaller oven. It takes the vegetable sides, rolls and reheating while the main oven holds the turkey. Maker charts list Brussels sprouts, carrots, green beans, squash and sweet potatoes at 385°F to 425°F, and USDA FSIS says to cook large amounts in batches.
This is a planning guide, not a menu. The times are copied from each brand’s chart, the safety rules from USDA FSIS, and we have not cooked a holiday dinner to check any of it.
What should go in the air fryer, and what should stay in the oven?
| Dish | Best place | Why |
|---|---|---|
| Whole turkey | Oven | FSIS roasting times assume an oven at 325°F or higher; no basket model here states a whole turkey |
| Turkey breast | Air fryer, if it fits | See air fryer turkey breast for the published times |
| Roasted vegetables | Air fryer | The foods maker charts cover best |
| Dinner rolls | Air fryer | Philips lists pre-baked rolls at 350°F for 6 to 7 minutes |
| Large casseroles | Oven | A full-size baking dish will not fit a drawer |
| Small baked dishes | Air fryer, in a pan | Cosori’s Pro LE manual says goods that can be baked in an oven can be air fried |
| Gravy and sauces | Stove | Philips warns against filling its pan with liquid |
| Leftovers, the next day | Air fryer | See how to reheat food in an air fryer |
The pattern is simple. Small, dry foods that benefit from browning go in the basket. Anything large, wet or soupy goes elsewhere.
How long do holiday vegetables take in an air fryer?
These rows are copied from each chart. “Not listed” means the chart has no row for that vegetable.
| Vegetable | Ninja AF100 series | Cosori Iconic |
|---|---|---|
| Brussels sprouts | 1 lb, cut in half, stems removed, 1 Tbsp oil: 390°F, 15 to 20 min | Quartered: 415°F, 8 to 16 min, shake |
| Sweet potatoes, whole | 4 whole (6 to 8 oz each), pierced with a fork 3 times, no oil: 390°F, 30 to 35 min | Baked, whole, 9 to 10 oz: 385°F, 45 to 60 min |
| Sweet potatoes, cut | 1 1/2 lbs, 1-inch chunks, 1 Tbsp oil: 390°F, 15 to 20 min | Not listed |
| Green beans | 1 bag (12 oz), trimmed, 1 Tbsp oil: 390°F, 8 to 10 min | Whole: 415°F, 4 to 8 min, shake |
| Carrots | 1 lb, peeled, cut in 1/2-inch pieces, 1 Tbsp oil: 390°F, 13 to 16 min | Sliced: 425°F, 10 to 16 min, shake |
| Butternut squash | 1 to 1 1/2 lbs, cut in 1- to 2-inch pieces, 1 Tbsp oil: 390°F, 20 to 25 min | Not listed by name (zucchini/squash, 1-inch slices: 385°F, 8 to 14 min) |
| Potatoes | 1 1/2 lbs russet, 1-inch wedges, 1 Tbsp oil: 390°F, 18 to 20 min | Cubed, 1 inch: 390°F, 8 to 16 min, shake |
| Cauliflower | 1 head, 1-inch florets, 2 Tbsp oil: 390°F, 15 to 20 min | Florets: 425°F, 8 to 14 min, shake |
| Corn on the cob | 4 ears, husks removed, 1 Tbsp oil: 390°F, 12 to 15 min | Whole: 380°F, 10 to 18 min, turn |
Two other charts are shorter. Instant’s Vortex 6-quart manual lists only asparagus (380°F, 7 to 9 minutes) and cauliflower (380°F, 6 to 10 minutes) among vegetables. The Philips HD9650 table has one row for roughly chopped mixed vegetables: 300 to 800 g at 400°F for 10 to 20 minutes, with the note to set the time to your own taste.
How to read the table:
- Amounts are part of the instruction. Ninja’s times are for the weight shown. Doubling the load for guests changes the result.
- Cosori runs hotter. Its Iconic chart goes up to 450°F. The Ninja AF100 and Instant Vortex stop at 400°F, so a 415°F or 425°F row cannot be copied onto them.
- Oil is listed for a reason. Ninja’s guide says to use at least 1 tablespoon of oil for fresh vegetables and potatoes.
- Acorn squash, parsnips and stuffing have no rows in any of these charts. We have left them out instead of guessing.
The full chart, with meats and frozen foods, is on our air fryer cooking times page.
How do you cook for a crowd in a small basket?
In batches. FSIS says air fryers generally do not have a lot of room inside, that overcrowding can prevent enough air circulation to cook food properly, and that large amounts may be best cooked in batches.
The manuals agree. Ninja’s AF100 guide asks for an even layer with no overlapping. Cosori’s Iconic guide says a full basket leads to uneven browning and longer cook times. Philips prints a MAX line in its basket and says not to fill past it.
Vegetable sides suit batch cooking because the chart times are short. Finished batches can wait under cover while the next one cooks. They are served hot, so the holding rule below applies.
Does a layer rack help?
It adds a second level for small, flat foods. It does not double the capacity on the chart, because no chart here gives times for two layers. Food on the top level sits closer to the element and browns sooner, so check it first.
Racks are sized for particular baskets. The ones SharkNinja and Cosori sell for their own models, with part numbers, are in our air fryer racks and pans guide.

Can you bake a side dish in an air fryer?
A small one, in a pan that fits. Cosori’s Pro LE manual says any goods that can be baked in an oven can be air fried, and that food with filling or batter should go in a heat-safe container first.
The manuals give three rules for pans:
- Leave a gap. Instant’s Vortex Slim manual says to leave about 1 inch of space around all sides of a baking dish so heat can circulate.
- Cover the top if it browns too fast. Instant’s Vortex manual suggests foil or an oven-safe lid when baking cake, pie or quiche. Check your own manual’s foil rules first in our guide to foil and parchment in an air fryer.
- Use the thermometer. FSIS lists casseroles at 165°F.
A casserole sized for a 9 by 13 inch dish will not fit a basket. Splitting it between two small pans works only if your air fryer takes them one after the other or side by side.

Is a dual zone air fryer better for holiday meals?
It helps with the timing problem. Two drawers mean two foods at two settings.
SharkNinja describes the DZ401 as having two independent 5-quart zones, each with its own basket, fan and heater. Its Smart Finish feature is for two foods that finish at the same time, and Match Cook copies one zone’s settings to the other to use the full 10 quarts on a single food. The smaller DZ201 works the same way; its FAQ says the zones are self-contained, with separate heating elements and fans.
The limit is the same as for any basket. Each drawer still holds one layer. For how the types compare on space and power, see how to choose an air fryer.

How do you keep food hot until everyone sits down?
FSIS sets the line at 140°F. Hot food must be kept at 140°F or warmer, because bacteria grow fastest between 40°F and 140°F. It suggests chafing dishes, slow cookers and warming trays for serving.
Some air fryers can hold food for a short while:
- Cosori Pro LE: Keep Warm defaults to 170°F for 5 minutes and can be set from 1 to 60 minutes.
- Philips HD9650: keep warm runs for 30 minutes by default at a fixed temperature. Philips notes that fries can lose crispness in this mode and that it is for holding just-cooked food, not reheating.
A basket holding one side dish is a basket that cannot cook the next, so Keep Warm suits the last batch only.
Once food comes off the heat, the clock starts. FSIS says leftovers must be refrigerated within 2 hours of cooking or of being removed from an appliance that was keeping them warm.
A timing plan built around the turkey’s rest
The most useful window is the one after the bird comes out. FSIS says to let a whole turkey stand 20 minutes before carving. The oven is now free and the air fryer has 20 minutes of its own.
- Days ahead: find the chart rows for your model and note the amounts. Check which pans and racks fit.
- The day before: cut the vegetables and refrigerate them. Pick an outlet for the air fryer that it will not share with a slow cooker or warming tray.
- While the turkey roasts: cook the longest vegetable rows first, such as whole sweet potatoes, and hold them covered.
- While the turkey rests: cook the quick rows, such as green beans, then warm the rolls.
- After dinner: refrigerate leftovers within 2 hours.
The outlet choice in step 2 comes from Ninja’s DZ201 FAQ. It says the 1690-watt unit must be on a 15-amp circuit and should be the only appliance plugged into that outlet.
Bringing an air fryer dish to Friendsgiving
A potluck adds travel time to the same rules.
- Hot food stays at 140°F or warmer, cold food at 40°F or below. FSIS sets those lines for serving, and the same limits apply in the car.
- Two hours is the total. Time in the car and time on the buffet both count.
- Crisp food softens on the way. If the host owns an air fryer, a few minutes on its Reheat setting brings the texture back. Reheated leftovers should reach 165°F.
- Ask before you plug in. A second high-wattage appliance on the host’s counter circuit can trip a breaker.
If you are the host, tell guests which appliances are free. For the table itself, our sister site Vintage Barware explains which glasses to set for a holiday table. And if guests are staying overnight, another sister site has a guide to choosing an air mattress for guests.
An accessory makes an easy thank-you for a host who owns an air fryer; our air fryer gift guide has a section for holiday hosts.
Beyond Thanksgiving
Nothing here is specific to one Thursday in November. The same plan works for Christmas dinner, Easter, a Sunday roast or any meal where the oven is full: vegetables and bread in the basket, the roast in the oven, a thermometer for both. Every guide on the site is listed on the air fryer accessories hub.
Frequently asked questions
What Thanksgiving sides can you make in an air fryer?
Vegetables are the sides the maker charts cover. Ninja's AF100 chart lists Brussels sprouts, carrots, green beans, butternut squash and sweet potatoes, and Cosori's Iconic chart lists most of the same. Bread rolls appear in the Philips HD9650 food table.
How do you keep food warm for Thanksgiving dinner?
USDA FSIS says hot food must be kept at 140°F or warmer, and suggests chafing dishes, slow cookers and warming trays. Some air fryers have a Keep Warm setting: Cosori's Pro LE defaults to 170°F, and the Philips HD9650 holds for 30 minutes by default.
Can you use two layers in an air fryer to cook more?
A layer rack adds a second level, but the maker charts are written for one even layer and give no times for two. Keep food clear of the heating element, swap or check the top layer early, and cook large amounts in batches, as FSIS suggests.
Can an air fryer and an oven run at the same time?
Yes, but watch the countertop circuit. Ninja says its 1690-watt DZ201 must be on a 15-amp circuit and should be the only appliance plugged into that outlet, or the breaker may trip.
How long can holiday food sit out?
Two hours. FSIS says perishable food left at room temperature for more than 2 hours should be thrown away, and leftovers should be refrigerated within 2 hours of cooking or of coming off a warming appliance.
