Someone who unwrapped an air fryer this season is still learning its settings. Two things help straight away.

A food thermometer. Cooking charts give starting times, but every source points back to the thermometer. USDA FSIS says “using a food thermometer is the only reliable way to ensure that foods have been cooked to a safe minimum internal temperature.” Its air fryer page adds that cooking times vary by machine while the safe temperature stays the same.

A person who cooks several portions at once runs into the air fryer’s size limit. FSIS says overcrowding can stop enough air from circulating to cook food properly, and suggests cooking large amounts in batches.

Check before you buy. Some campuses ban air fryers in residence halls, including these two.

• The University of Texas at Austin lists air fryers among appliances to leave behind. By order of the University Fire Marshal, any appliance with open heating coils is prohibited in residence halls.
• Illinois State University says heat-producing appliances, including air fryers, are not allowed in residence hall student rooms but are allowed in university apartment kitchens.

Rules differ by school and by building type, so look up the student’s own housing list. If air fryers are banned, skip the appliance and its accessories. A cookbook for later or a food thermometer for a shared kitchen still works.

A refillable oil sprayer. Cosori’s Pro LE manual calls oil sprays “excellent for applying small amounts of oil evenly” and caps added oil at 2 tablespoons. A wireless or leave-in thermometer. FSIS describes wireless and smart thermometers as “designed to remain in the food while it is cooking” with a live status on internal temperature, inserted at least 1 inch deep into the thickest part. Standard instant-read models are different: FSIS says not to leave a thermometer in food during cooking unless its maker says it is designed for that. Specialty pieces. Skewer racks, silicone pots and cake barrels suit people who like trying new uses. Confirm the dimensions against their basket.

For the family cook with a dual-basket air fryer

Two-drawer models cook two foods at once, so accessories need to fit each drawer on its own.

Ninja’s DZ200 series FAQ says the two zones on models such as the DZ201 are self-contained, with separate heating elements and fans. The same FAQ says it is safe to use aluminum foil in the baskets. That makes liners and racks sized to one drawer a practical gift, ideally as a pair.

A food thermometer. The safest pick if you do not know the model. USDA FSIS puts all poultry, turkey included, at 165°F, and a second thermometer is handy when several dishes finish together.

A rack set. A layer rack adds a second level for small sides. It needs to fit the basket and stay clear of the heating element, so this one depends on knowing the model.
